Champagne, France

Valerie Frison has been growing her few hectares of vines organically since 2003, in the Côte des Bar region where Pinot Noir is king. It's in Ville sur Arce, in the south of the Champagne region, that Valérie - recently joined by her son Thomas de Marne - works her vines with all the respect they deserve. On the face of it, the plan is simple: grow healthy grapes and pick them when ripe. Little intervention during vinification, spontaneous fermentation in barrels and very little sulphur. Like the champagnes we love, they are not measured out and are made from a single harvest. Thomas is gradually taking over the estate under his own name.
